About Guylian (general)

Can I contact Guylian regarding sponsorship?

Our company strategy is to centralise our limited sponsoring funds in one area where we can make a difference. After extensive research in 1999 we found a cause ‘Project Seahorse’ which fulfilled all the criteria that we were looking for and where our contribution could really make a difference to improving the world we live in. We have also been able to build a successful business worldwide via the unique natural shapes of the seashells and fish of our oceans, so it is also a way of sharing our gratitude to these unique creatures who are under threat in the oceans of the world. For more information, read our Project Seahorse pages or visit www.projectseahorse.org.

Can I request free Guylian product samples?

Unfortunately we cannot send you product samples. For two reasons. Chocolates are very susceptible to temperature fluctuations. So we do not send our chocolates direct by post, as we cannot guarantee they will arrive with you in perfect condition. Secondly, the majority of the available samples is centralised in the promotion of Project Seahorse, of which Guylian is a long term partner and donor. To find out more about Project Seahorse, read our Project Seahorse pages or visit www.projectseahorse.org.

Is it possible to visit the factory?

For hygiene and security reasons it is not possible to show visitors our production facilities.

How should our chocolates be stored?

Often, chocolates are kept in the refrigerator, which is not to be recommended. Chocolate keeps best at a temperature of 16 to 18 degrees Celsius. A dry, odourless cellar or unheated room is the ideal place. If possible, keep the chocolates in their original packaging (box, wrapped in foil, etc.), or in a hermetically sealed or metallic box. And avoid storing them next to food with strong odours.

Why do some chocolates have a white or grey look?

Chocolates are a sensitive product and can take on a white/grey external appearance due to two types of activity: fat blooming and sugar blooming.

What causes fat bloom?

Fat bloom is a migration of fats to the exterior or a re-crystallisation of the fats. There can be a variety of causes: poor tempering, too thin a layer of chocolate, the filling, storing it at too high a temperature. In manufacturing, tempering involves bringing the cocoa butter to its most stable crystalline form to obtain a shiny surface, good retraction of the chocolate, ideal bite and a pleasant mouth feel. It is something to which great attention is paid at Guylian. The thickness of the chocolate is also an essential element in Guylian's process control. Too thick, and taste quality is reduced. Too thin, and it increases the speed at which fat appears on the surface. Fats in the filling can provoke whitening. Guylian is particularly attentive to the stability of all its fillings as well as to tempering when the chocolates are made. Finally the storage temperature of chocolate is very important and accelerates or stabilises fat migration. This is why temperatures of 16 to 18 degrees Celsius should be respected.

What causes sugar bloom?

Sugar bloom is caused by re-crystallisation of the sugar in the chocolate. It is caused by condensation due to significant thermal shock and when the humidity level in the air is too high. To avoid this phenomenon, Guylian's storage standards are very demanding; constant temperature and permanent control of humidity levels. You must avoid storing your chocolates in the refrigerator...
