Lara from Tarte Bon Bon created a delicious Christmas recipe using Guylian chocolate. On her blog she writes: “Is there anything more traditional than a Christmas roll? This dessert belongs on your table during the holidays”. And we totally agree with her.
She went for a coffee, almond and cranberry flavor combination. And chocolate, of course! Lara used our Extra Dark 72% Bar for an intense chocolate aroma and our Milk & Almond Bar to give the roll that little extra something. As the finishing touch, she added a few Chocolate Coated Cranberries on top of the roll. It is the perfect balance between tarty cranberries and bittersweet chocolate.

1 baking tray (30×30 cm)
chocolate, Lara used 100 g Extra Dark 72% Chocolate Bar and 100 g Milk & Almond Chocolate Bar
1 to 2 tbsp
cranberries (frozen or fresh)
Guylian’s Chocolate Coated Cranberries
A few cranberries
20 g dark chocolate (optional)
Preheat the oven to 150°C/300°F.
Grease a baking tray and line with baking parchment.
Melt the chocolate au bain marie.
Add the butter and coffee and combine.
Tip the egg whites in a large bowl and beat until holding soft peaks.
Mix sugar and egg yolks in another bowl.
Add and stir the chocolate mixture into the egg yolks mixture.
Fold the egg whites carefully in small portions under the chocolate and egg yolks mixture.
Pour it onto the baking tray and spread evenly. Bake for 20 to 25 minutes.
Remove the cake from the oven and let cool completely.
Dust the cake with icing sugar and invert the cake onto another sheet of baking parchment.
Remove the old sheet of baking parchment.
Beat the whipping cream with the vanilla sugar and almond extract.
Spread the whipped cream evenly over the cake and sprinkle with cranberries.
Carefully roll the cake using the baking parchment. This is pretty hard to do at first. But don’t worry, taste is more important than looks ;-).
Melt 20 g chocolate to stick the Chocolate Coated Cranberries and fresh cranberries to the Christmas roll.
